This salt is favored by the top chefs in France and all around the world. French Grey Salt is formed as the sea water flows into the Guerande Marshes, in France, during high tides. It is hand-harvested by salt workers, using skills and methods over a thousand years old. The salt obtains its natural grey coloring from the salt crystallizing on clay. Organic Wheat

There are 2 kinds of wheat used in the mixes, hard red spring wheat and soft white wheat. Each type of wheat has its own advantages in the bread and pancake making process.
Hard red spring wheat is typically higher in protein content than hard red winter wheat and thus is very good at producing gluten, the elastic component of a dough that can capture and hold carbon dioxide (the gas produced by yeast that raises your dough), making it ideal for breads, rolls, and pizza. Some of the world's finest yeast breads, hard rolls and bagels are made with hard red spring wheat.

 

The organic hard red wheat that is used in the mixes is a special selected variety of spring wheat that is known for its baking qualities, high protein and strong gluten. This wheat is grown by Ole Norgaard on the organic farm west of Lewistown, Montana.

The organic soft white wheat that is used in the mixes is a different type of wheat that has no major genes for bran color (unlike traditional “red” wheat which has one to three bran color genes). White wheat is generally low in protein and does not contain the strongly-flavored phenolic compounds that are in red wheat. This gives white wheat a milder flavor, and also means that products made with white wheat require less added sweetener to attain the same level of perceived sweetness.

Stone Ground Flour Making

In the Ecological Agriculture Projects publication; Nutritional Characteristics of Organic, Freshly Stone-ground, Sourdough & - Conventional Breads by Judy Campbell, B.SC., Mechtild Hauser, and Stuart Hill, B.Sc., Ph.D., P.Ag., the following is written about Stone Ground Flour:

“There are several advantages to stone-ground wheat flour. The endosperm, bran, and germ remain in their natural, original proportions. Because the stones grind slowly, the wheat germ is not exposed to excessive temperatures. Heat causes the fat from the germ portion to oxidize and become rancid and much of the vitamins to be destroyed (Aubert, 1989). Since only a small amount of grain is ground at once, the fat from the germ is well distributed which also minimizes spoilage (Mount, 1975). Nutritive losses due to oxygen exposure are also limited by the fact that stone-ground flour is usually coarser (Thomas, 1976). As expressed in The Bread Book (Leonard, 1990), stone-ground flour is preferred by many bakers and natural food advocates because of its texture, its sweet and nutty flavour, and the beliefs that it is nutritionally superior and has a better baking quality than steel-roller-milled flour. Moritz and Jones (1950) and Schultz et al. (1942) showed that stone-milled flour was relatively high in thiamin, compared to roller-milled flour, especially when from hard wheat”

North Frontier Foods’ stone burr mill

Because a stone mill preserves all the goodness that is contained in the complete and unaltered grain kernel, as well as the flour retains nearly all the healthy germ, natural oils, vitamins and enzymes of the grain, North Frontier Foods uses a stone burr mill to make the flour of the black/purple corn, hard red spring wheat and the soft white that is used in the mixes.

The stone burr mill that is used is made by Meadows Mills in North Carolina. The millstones used in the stone burr mills are cut from Balfour pink granite which is quarried in North Carolina.
